


Mark, the youngest of eight, was raised and razed with a nickname. “CHUBBS”. To this day his older brothers will still call him by this name. As you can imagine he possessed this cherub like face, which endeared him to everyone. He has grown now and although he no longer carries his “chubby” physique. His integrity, straightforward nature and general fun-loving attitude still endear him to everyone.
Although his personal nickname certainly set the mood for the name of the company his food really is quite filling and bountiful. Many describe his food as “grandma’s comfort food” yet with class. It is always beautifully presented and displayed with a touch of flare. Often using granite slabs rather than standard service ware and cascading food to give a free flowing feel. Chef “Chubbs” brings to you a wide variety of flavors. He prides himself on the fact that he doesn’t have just one specialty, but rather a table full of different and delicious cuisines. He represents a multi regional flare that works well with his varied events and clients.
Often many of us feel, if only we could apprentice under someone to learn a fantastic trade….. Well. Mark has been blessed with many mentors. He learned through the school of hard knocks and has an amazing eye to pull out what really works for the everyday. When he started in the restaurant industry he quickly found out it was a great way to save on his grocery bill. Starting at the bottom as a dishwasher when he was 15 he worked his way up the ladder of success to the level of Chef at a multi- million dollar restaurant, all the while creating great dishes. He has worked in some of the Puget Sounds most popular and respected restaurant companies. Finally after, many menus, many recipes developed, many people saying you should be on your own, he is taking all of his 20 years of mentored experience and he is presenting to you what he has learned.
